Soy Honey Ginger Lime Mackerel

This mouth-watering recipe will be a hit with all the family. While I used Mackerel you could substitute Salmon or Tuna and achieve the same result.

Ingredients: (Serves 4)

4 portions of fish of your choice

2 tbsp soy sauce (salt reduced)

2 tbsp honey (I used macadamia honey)

1 knob of grated ginger

Juice of 1 lime


Mix all ingredients in a large bowl and marinate fish for approximately 30 mins

Heat non-stick pan on high heat. Turn down pan and add fish then pour over remaining marinade

Cook fish for approximately 15 mins turning once only

Serve with lovely winter vegetables of your choice
