Mediterranean Chicken & Vege

If you haven't already gathered from our other recipes, we like meals that are quick, easy and nutritious - that leave you feeling satisfied and straight-up magical.  This beautiful Mediterranean chicken & vege recipes is adapted from an old-time favourite of my mum.  The biggest effort is cutting all the vegetables and waiting for it to cook!  Guaranteed to be a hit with the family, this recipe is highly adaptable to whatever vegetables you have in your fridge, and are an easy way to ensure you're getting your 5 servings of vege per day!

Ingredients (serves four)

DICE AND CHOP ALL INGREDIENTS INTO LOVELY BITE-SIZED PIECES

  • 500g chicken breast or thigh
  • 1 zucchini, diced
  • 200g pumpkin
  • 1 squash
  • 1 red onion 
  • 1 sweet potato
  • handful cherry tomatoes (pop these in whole)
  • 1 lemon, cut into 6-7 slices

FOR SEASONING

  • 5 sprigs dried or fresh thyme
  • 1 sprig rosemary

Method

  1. Preheat fan-forced oven to 175 degrees C
  2. Chop all ingredients (besides cherry tomato) into bite-sized pieces
  3. Splash about 1/4 cup of coconut oil into a baking dish and add all ingredients
  4. Sprinkle thyme and rosemary over top of ingredients and toss ingredients around to coat 
  5. Cook in oven for around 40 minutes, or until vegetables are tender and chicken is cooked through
  6. Enjoy with friends and family, and make sure to wrap some up for leftovers!
